Анотація


The results of investigations of the phenolic composition of blueberry are given. The influence of technology for the processing of blueberries on the content of the phenolic composition in the production of juices, purees, freezing of raw materials has been researched. It has been proved that a decisive role in the mechanism of persistensy of polyphenol complex of blueberry belongs to fractional composition. The biological value of the obtained extracts of the blueberry has been confirmed and of concentrate of blueberry polyphenols was developed.
