Анотація

Ukrainian wild and cultivated herbs are important as source of functional ingredients for nutrition products. From 900 specimens in gene pool 45 species were selected as promising. Although investigation of physical, chemical and organoleptic properties of the specimens is consequential, it is also necessary to determine quality of raw materials, to establish recipes of compositions and extraction techniques.
